Pumpkin and honey muffins

125 g butter
1/2 cup sugar
1/4 cup honey
2 eggs
1/2 cup natural yoghurt
1 and 1/2 cup mashed pumpkin
1 teasp lemon rind
2 1/2 cups sr flour

Topping
1/2 cup chopped walnuts
2 tblsp sugar
1 teasp mixed spice

Mix all ingredients together fill mixture into muffin pans. Place a little topping mixture on each muffin and press lightly.
Bake in moderate oven 20-25 minutes
ENJOY xx

  2. If you take the walnuts off and put crushed macadamia then i think id be in heaven eating these. Very inventive - where do you get all these great recipes from.
