Carrot cake cookies

The biscuits are divine 

2 cups of shredded carrot 
2/3 cup brown sugar
2 tablespoons oil ( I used olive )
1 teaspoon grated orange rind 
3/4 teaspoon vanilla 
1 egg
1 cup plain flour 
1 teaspoon cinnamon ground 
Pinch of salt 
1/4 teaspoon baking soda 
125grams cream cheese 
1 cup icing sugar 

Method 
Preheat oven 200
Cover 2 trays with baking paper 
Combine carrot & 3 tablespoons of the brown sugar in a bowl , toss to coat. Place carrot mixture in a mesh sieve & stand to drain for 10 mins . ( this tenderizes carrot ). Discard the liquid 

Place 2 tablespoons of the butter in bowl in microwave until melted . Add oil , rind vanilla extract & egg , stir well. 

Combine in a bowl the flour & the remaining brown sugar , cinnamon , salt ,& baking soda . Stir well. Add carrot mixture & butter mixture . Stir until combined . 
Drop spoonfuls on baking tray. Bake for 11 minutes. 
Remove from oven & cool completely .
Combine cream cheese , remaining butter & icing sugar beat with a mixer at medium speed . 
Sandwich together cookies. Dust with icing sugar

  2. At last, someone not doing "sugar free" baking. They look spectacular and yummy to boot.
